Heidi's Amazing Brownies

Heidi's Amazing Brownies

Preheat oven to 180 C (350 F)

COMBINE:
1 1/2 Cups sugar (or 1 1/4 C)
3/4 Cup melted butter (do NOT substitute oil at the same amount)
2 Tablespoons water

STIR IN TO ABOVE MIXTURE:
2 eggs
2 teaspoons vanilla (or a packet of vanilla powder)

COMBINE SEPARATELY; THEN ADD TO PREVIOUS MIXTURE:
1 1/3 Cup flour
3/4 Cup cocoa (using dark cocoa gives richer flavour)
1/2 teaspoon baking powder
1/4 teaspoon salt

POUR into greased 13 inch x 9 inch pan. Bake 18-25 min (check early if oven runs hot).
Mixture is quite thick.
Cool in pan.

almost June, 2020

So, I had forgotten that I posted here a couple months ago, at the end of Term 3. I wrote a bit about today being the last day of school during the pandemic, but that's not quite accurate--at least, not for most high school teachers where I work.

This term has flown by. Week after week, trying to help my students improve their writing and just get their work done... it has been intense. I know there is more I wish I could have done.

There were days of depression too. The first round of adjusting to living in the world which was suffering from COVID-19 involved grieving for people in the city of Wuhan, and also dealing with the fear of coming down with the virus. But then as April came around, things startted getting worse in other parts of the world. Italy, Spain, the UK, and the US (among other places too, of course).

This was another wave of grief, but not one equally felt by people who aren't from one of those countries. So that was hard.

Week 9 teaching online: March 2020

I can hardly bear to read the news anymore. Suddenly, somehow, living in Mongolia is one of the safest places in the entire world, at least that's how I feel at this moment in time. Mongolia was one of the very first countries to take action, early on, when more and more people were getting sicker and sicker in Wuhan.

So many places, though, I guess hoped that it would never happen within their borders. And so now, the numbers of cases and people hospitalized in places like Italy and the US are just rising and rising. Hospital space is limited and doctors and nurses and other staff are getting sick.

In Korea, one family recovered from the virus but recently became sick again.

I should post a link to that information but for now, I'm just writing this to have a bit of an outlet. (No one really reads my blog anyways, as it has been inactive for so long!)

Maybe I'll start writing a little more.

But this week is the end of Term 3, so grading takes precendence. (!)

Here's hoping Cambridge will give us some guidelines as soon as possible so we can do these mock exams with confidence.

Wednesdays are my day to get stuff done: prep lessons, fill in my teacher's "blue book", write comments for student reports, and go through some boxes of stuff for use or recycling. Help me to use my time well today.
